Recipe: Cream of Broad Beans Soup

Cooking something for my family today. Healthy cream of broad beans soup, which contains huge amount of fibre and no saturated fats. And even though I don't like this vegetable, in this soup is delicious. Definitely try this at home!

  • 1 kg of broad beans
  • 3 small potatoes
  • salt & pepper
  • 1 onion
  • 2 tablespoons of olive oil
  • 0,6l-1l of vegetable stock or water
First of all cook the broad beans, then peel off. To a large pot heat olive oil and shortly fry chopped into cubes onion and potatoes. Add water and cook until potatoes are soft. After that, put the broad beans into the pot and cook for about 3-4 minutes. Blend it. Add salt and pepper.
Serve with a tablespoon of yoghurt or with garlic croutons.
