Recipe: Cinnamon rolls with walnuts and cream cheese frosting. #BAKEMASday1

It's the first post of the #BAKEMAS series and because it's the first I decided to make something traditional- cinnamon rolls. I'm already throwing out there that this recipe is not healthy like others on this blog. And it's definately not vegan, the only semi healthy thing is non-refined sugar that I added. I mean, it's Christmas soon so why do we have to limit ourselves at the most wonderful time of the year?



I got the recipe from All Recipes. It's a recipe for 'clone of cinnabon' (very popular cinnamon rolls made by Cinnabon Bakery). I've never tried the original one before so I can't say if they taste the same. But they sure do taste amazing. I actually took them to a dinner party and everyone really enjoyed them.



As always I changed the recipe. I added some walnuts to keep a balance as the buns are really sweet. Also it said that you have to use bread flour, which I didn't because I thought they will be too hard, instead I used regular plain flour. And it worked a treat. Try them immidiately!


Ingredients:

  • 1 cup warm milk
  • 2 eggs
  • 1/3 cup butter
  • 4 1/2 plain flour
  • 1 tsp salt
  • 1 1/2 cup brown sugar
  • 2 1/2 tsp dried yeast
  • 2 1/2 tbsp ground cinnamon
  • 1/3 cup softend butter
  • 3/4 cup finely chopped walnuts
For the icing:
  • 1 package cream cheese
  • 1/4 cup softened butter
  • 1/2 cup confectioners white sugar (or to taste)
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  1. Put every ingredient (besides cinnamon, walnuts and 1/3 cup of butter) to a bread machine, select dough cycle and press start. If you don't own a bread machine I found a comment explaining how to do this: dissolve the yeast in the warm milk in a large bowl. Mix in the sugar, butter, salt, and eggs. Add flour and mix well. Knead the dough into a large ball, using your hands dusted lightly with flour. Put in a bowl, cover and let rise in a warm place about 1 hour, or until doubled in size.
  2. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
  3. Roll dough into a 16x21-inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture and walnuts. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  4. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.
